Sweet Potato Pottage

Ingredients
- Sweet potato
- Onion
- Ginger
- Garlic cloves
- Romano or bell pepper
- Tomatoes
- Vegetable oil
- Maggi cube
- Basil or spinach
Method
- Prepare the following ingredients:
- ¼ brown onion, diced
- ¼ inch of ginger, diced
- 1-2 garlic cloves, diced
- 1 large sweet potato, chopped into medium-to-large blocks
- Blend the following ingredients:
- 1 romano pepper
- 2 medium tomatoes
- In a pot, hit up 1 tbsp. of vegetable oil for 1-2 minutes of a medium-to-hot temperature
- Sautee your onion, garlic and ginger for ~3 minutes
- Add in your bended pepper mix, ~100ml of water, and season with 1 maggi cube. Cook down for ~10 minutes
- After your pepper mix has cooked down, add in your chopped sweet potato, and water until the potatoes are just about covered
- Cook for 20 minutes
- After 20 minutes, mash a few potatoes buy cutting in half with a spoon, and mix together (this should create “pottage” texture)
- Add in ~50 grams of chopped and washed basil and mix together
- Steam for a further 5 minutes on a medium temperature
- Add salt to taste
