- 2 chicken legs
- Jerk marinade
- Dry jerk seasoning
- Salt
- Pepper
- All-purpose
- Browning
- 1 chicken bouillon cube
- Olive oil
- Jerk BBQ sauce
- Brown sugar
Method
- Clean 2 chicken legs with water and lemon or vinegar
- Slit a few scores into the chicken (this will be to get the seasoning more deeply into the chicken)
- Season your chicken:
- ½ tsp. salt
- ½ tsp. black pepper
- 1 tsp. all-purpose seasoning
- 1 tsp. jerk seasoning (dry)
- ½ tsp. browning
- 1 tbsp. jerk marinade (wet)
- 1 chicken bouillon cube
- 1 tsp. olive oil
- Massage seasoning thoroughly into the chicken and slits. Marinate in the fridge for 3 hours or proceed to cook straight away
- Oven bake the chicken on 180°C for 30 minutes, covered with foil
- Preparing the BBQ sauce:
- 2 tbsps. jerk BBQ sauce
- 1 tbsp. brown sugar
- 1 tsp. jerk seasoning (wet)
- 50ml of water
- Heat up until the sauce thickens
- After your chicken has been in the oven for 30 minutes, use a kitchen brush to spread all of your BBQ sauce onto your chicken
- Put your chicken back in the oven, uncovered, for a final 25 minutes
