Ingredients
- 2 chicken breasts
- Garlic granules
- Black pepper
- All-purpose
- Jerk seasoning
- Jerk marinade
- Olive oil
- Pimento
- Garlic cloves
Method
- Butterfly 2 chicken breasts:
- Cut in half length ways
- Flatten with a rolling pin or whatever you have in the kitchen
- Chop into chunks/ small squares
- Add in a bowl and season as follows:
- 1 tsp. of garlic granules
- ½ tsp. of black pepper
- 1 tsp. of all-purpose
- ½ tsp. of jerk seasoning
- 1 ¼ tbsps. of jerk marinade
- ½ tsp. olive oil
- Mix all seasonings into the chicken chunks. Then add to skewers
- Be sure to soak your wooden skewers in water for at least 30 minutes, to avoid it burning in the oven
- Line your banking tray with foil, at the bottom add 1 tsp. all-spice/ pimento and 2-3 cloves of garlic
- On the tray, add your skewers
- Bake on 180°C for 40 minutes, turn half way through
- Garnish with spring onion
