Ingredients
- 500 grams of beef
- ½ medium brown onion
- ½ medium red onion
- 3 large tomatoes
- Tomato paste
- Curry powder
- Shrimp powder
- 2-3 garlic cloves
- ½ inch ginger
- Scotch bonnet
- Salt
- Black pepper
- 2 seasoning cubes
- Vegetable oil
- Optional: 4 boiled eggs
Method
- Clean ~500 grams of beef. Season as follows:
- ½ tsp. of salt
- ½ tsp. of black pepper
- 1 maggi / seasoning cube
- Mix in a blended mix of: ½ onion, 2-3 garlic cloves, ½ inch of ginger, 1 scotch bonnet. Include a bit of water to help the blend
- Steam/ cook on the cooker for 15 minutes
- After cooking your beef, either: (i) deep fry the meat; (ii) oven cook the meat; or (iii) air fry the meat
Preparing the stew
- Blend together 3 large tomatoes until smooth
- In a pot add:
- 1/8 cup of oil
- ½ medium red onion, sliced
- Cook down the onions until translucent (2-3 minutes)
- Add in ½ cup of tomato paste, cook on medium to high temperature for 3-5 minutes
- Add in your tomato blend, mix and season as follows:
- ½ tsp. of curry powder
- 1 tsp. of shrimp powder
- 1 maggi cube
- Cook down on a medium temperature until the stew has thickened and darkened – this should take ca. 45 minutes
- 20 minutes before the end add in:
- 1 cup of stock (from the beef cooked earlier)
- Your cooked beef
- Optional: 4 boiled eggs
