Ingredients
- 1 medium brown onion
- 3 green scotch bonnet peppers
- Ginger
- Garlic
- Spring onion stalks
- All-purpose seasoning
- Salt
Method
- Blend down the following thoroughly in a food processor:
- 1 medium brown onion
- 2 green scotch bonnet peppers
- ½ inch of ginger
- A handful of garlic cloves (4/5)
- 2 spring onion stalks
- Add blend to a pot and heat it on a low to medium temperature for 5 minutes (you want to dry up any extra liquids)
- Add ¾ cup of vegetable oil on top of the oil
- Fry on a medium temperature for 10 minutes or until the oil sets on top
- Season with ½ tbsp. of all-purpose seasoning
- The longer the sauce in cooking, the more the colour changes from a bright green to a darker green
