Steamed Fish and Okra

Ingredients
- 3 red snapper fishes
- 1.5 tbsps fish seasoning
- 1.5 tbsps all-purpose
- 1 tbsp. garlic granules
- 1 tsp. salt
- 1 tsp. black pepper
- Handful of fresh thyme sprigs
- 3 medium tomatoes
- 1 medium brown onion
- 2 spring onion stalks
- 2 different colour medium bell peppers
- 2 medium carrots
- 2 cloves of garlic
- 50 grams of okra
- 1 scotch bonnet
- 1 tbsp. butter
- 200ml coconut milk
- Vegetable oil
Method
- In a small bowl, mix together the following seasonings for your fish:
- 1.5 tbsps fish seasoning
- 1.5 tbsps all-purpose
- 1 tbsp. garlic granules
- 1 tsp. salt
- 1 tsp. black pepper
- Clean your fish by soaking in water and vineger
- Dry your fish with kitchen towel, score with a sharp knife and start to thoroughly rub in your seasonings on the outside of the fish, inside the slits and inside the fish
- Save 1 tbsp of this mixed seasoning for later
- Prepare:
- 3 medium tomatoes, chopped
- 1 medium brown onion, sliced
- 2 spring onion stalks, chopped
- 2 different colour medium bell peppers, sliced
- 2 medium carrots, sliced
- 2 cloves of garlic, minced or diced
- 50 grams of okra, chopped
- Heat up 1/8th cup of vegetable oil and 1 tbsp. of butter for ca. 2 minutes on a hot temperature
- Sautee your onions and garlic for around 2 minutes
- Add all the rest of your vegetables, excl. your okra, and season with the remaining tbsp. of the seasoning mix made earlier on and a handful of fresh thyme sprigs
- Cook down for around 5 minutes of a medium temperature
- Add around 200ml of coconut milk and 1 cup of water, also add a scotch bonnet
- Cook on medium temperature for around 10 minutes
- Add your fish on top and your okra
- Cook on a low to medium temperature by steaming for 15 minutes, flip fish half way through. Cover with foil or cling film to help with the steaming process
