Ingredients
- ~500 grams of lamb chops
- Brown onion
- Ginger
- Spring onion
- 1 medium bell pepper
- Tomato
- Garlic
- Black pepper
- Pimento / all-spice
- Garlic granules
- All-purpose
- Chilli flakes
- Salt
- Browning
- Vegetable oil
- Scotch bonnet
- Fresh thyme
- 1 potato
- 1 carrot
- Ketchup
- Parsley
Method
- Season ~500 grams of lamb chops as follows:
- ½ tsp. of salt
- ½ tsp. of black pepper
- ½ tsp. of pimento / all-spice berries
- ½ tsp. of garlic granules
- 1 tsp. of all-purpose
- 1 tsp. of chilli flakes
- ¾ tsp. of browning
- Prepare the following ingredients:
- ½ brown onion, diced
- ½ inch ginger, diced
- 1 spring onion stalk, chopped
- ½ medium bell pepper (any colour), sliced
- 1 tomato, chopped
- 2 garlic cloves, diced
- Mix the lamb chops and vegetables together in a bowl
- In a pan, add 2 tbsp. of vegetable oil and heat up for ~2 minutes
- On a hot temperature, brown the lamb on both sides for ~3-5 minutes on each side
- Remove your lamb from the pan, add in your vegetables and sauté on a medium to hot temperature for ~3-5 minutes
- Season to taste with a pinch of extra salt and all-purpose, as well as ~4 fresh thyme sprigs
- Re-add your lamb and some beef stock (1 beef cube dissolved in hot water), until the lamb is just about covered
- Drop in 1 scotch bonnet
- Cook on a medium temperature for 50 minutes
- 10 minutes before the end, add in:
- ½ medium potato, chopped into cubes
- ½ carrot, chopped into small cubes
- 2 tbsps of ketchup
- Cook down for a final 10 minutes, Garnish with parsley
