Ingredients
- ½ medium pumpkin (or 1 butternut squash)
- Salt
- Sugar
- Nutmeg
- Cinnamon
- Peanut butter
Method
- Peel and chop (into blocks) ½ medium pumpkin (or 1 butternut squash can be used as a substitute)
- Add to a pot along with water until the pumpkin is just covered. Add a pinch of salt
- Boil on a medium to hot temperature for 15-20 minutes
- Sieve the water away into a separate bowl, then re-add the softened pumpkin back to your pot
- User a masher to mash the pumpkin / squash down until soft, use some of the sieved water if you need to soften the pumpkin further
- Season with:
- ½ tsp. of sugar
- ½ tsp. of nutmeg
- ½ tsp. of cinnamon
- 1 tbsp. of peanut butter
- Mash/mix further
- Garnish with roasted pumpkin or butternut squash seeds
