Ingredients
- 1 plantain
- 1 large shallot
- Garlic cloves
- 1 medium tomato
- ½ bell or romano pepper
- Scotch bonnet pepper
- 2 chicken sausages
- 5 eggs
- Seasoning cube
- Vegetable oil
Method
- Peel and slice 1 plantain (width way)
- Take this away and either deep fry or air fry the plantain
- If you choose to air fry, use ca. 160 °C for 15 minutes (flip half way)
- Optional: coat with salt and a tsp. of oil before air frying
- Chop:
- 1 large shallot
- 1 medium tomato
- ½ bell pepper or romano pepper
- ½ scotch bonnet pepper
- ~2 garlic cloves
- 2 chicken sausages
- In a pan, add 2 tbsps of vegetable oil
- Start by cooking your chicken sausages through
- Then add your chopped shallots and garlic and sauté for ca. 2-3 minutes
- Add the peppers and tomatoes and sauté for 2-3 minutes
- Season with 1 seasoning cube
- Remove contents and save for later
- Separately, whisk together 5 eggs
- Add the sautéed contents / mix into the whisked eggs
- Add another tbsp. of vegetable oil to the pan
- Next add your egg mixture
- Cover and steam on a lower temperature for 15-20 minutes until thickened and fully cooked through
