Jerk Chicken Rasta Pasta

Ingredients
- 300 grams (dry) penne pasta
- 2 chicken breasts
- 3 bell peppers (different colours)
- Garlic
- Spring onion
- Salt
- Garlic granules
- Black pepper
- All-purpose seasoning
- Chicken seasoning
- Paprika
- Jerk marinade
- 1 chicken stock cube
- Fresh thyme
- Parsley
- Olive oil
- Coconut oil
Method
- Boil/cook, with salt, ca. 300g (dry) of penne pasta as per instruction on the pack
Prepping:
- Start by preparing the following ingredients:
- ½ of each of 3 different colour bell peppers, sliced
- 2-3 garlic cloves, diced
- 1 spring onion stalk, chopped
- Prepare your chicken breast:
- Butterfly 2 cleaned chicken breasts (slice them in half, length ways)
- Cover the 4 pieces with cling film, and use any appropriate kitchen object you can find (or a rolling pin) to roll/smash the pieces until flattened (this will help the chicken cook faster)
- Season as follows:
- ½ tsp. of salt
- ½ tsp. of garlic granules
- ½ tsp. of black pepper
- 1 tsp. of chicken seasoning
- 1 tsp. of all-purpose seasoning
- ½ tsp. of olive oil
- 1.5 tbsps of jerk marinade
- Mix all together
Cooking:
- In a pot, add 1 tbsp. of coconut oil and heat on a hot temperature for ca. 1-2 minutes
- Add your chicken breasts and cook on both sides – ca. 5 minutes each side on a hot temperature
- Remove the chicken and save for later
- In the same pot, sautee your garlic cloves and spring onions for 2 minutes
- Add in your sliced bell peppers and cook down for ca. 3 minutes
- Dissolve 1 chicken stock cube in ca. 150ml of boiled water, and pour this into your pot
- Cook all together for ca. 2 minutes, then add in 200ml of cream (double cream for the most taste, single to be healthier)
- Add the following seasonings:
- Small handful of fresh thyme
- 1 tsp. of all-purpose
- 1 tsp. of paprika
- ½ tsp. of black pepper
- ½ tsp. of jerk marinade
- Cook for 5 minutes on a medium to hot temperature, then add 1/8th cup of grated cheese (of your choice)
- Cook down for a further 5 minutes
Bringing it all together
- Re-add your pasta, and most of your jerk chicken (save some to go on top of the pasta at the end) and mix all together
- Cook together on a low to medium temperature for 2-5 minutes
- Garnish with parsley
- Serve the rest of your jerk chicken on top
