Ghanaian style deviled eggs

Ingredients
- 4 eggs
- Salt
- Scotch bonnet (at least 1)
- 1 medium tomato
- Garlic
- Ginger
Method
- Hard boil 4 eggs (20 minutes)
- Grind down the following ingredients – you can use a Ghanaian grinding bowl (the Asanka, earthenware dish), or if you don’t have that use a blender/food processor and pulse blend:
- At least 1 scotch bonnet
- 1 medium tomato (remove the insides – this will make our pepper sauce not too watery)
- 1 garlic clove
- ¼ inch of ginger
- Season your pepper mix with ½ tsp. of salt
- Cut your eggs in half and add your pepper mix on top, over the yolk
- Garnish with red onion slices
