Ingredients
- ~400g of diced beef
- 1 tbsp. of all-purpose seasoning
- 1 tsp. of black pepper
- 1 tsp. of pimento / all-spice berries
- ½ tbsp. of garlic granules
- 1 beef stock cube
- 1 seasoning/bouillon cube
- 2 tsp. of browning
- Small handful of fresh thyme sprigs
- ½ medium brown onion, chopped
- 1 bell pepper (2 colours), chopped
- 2 small tomatoes, chopped
- 3-4 garlic cloves, diced
- 1 tbsp . of vegetable oil
- 1 scotch bonnet pepper
- 1 tbsp. ketchup
- 1 medium potato
- 1 medium carrot
Method
Marinate the beef:
- First, clean ca 400g of diced beef with water and lemon and/or vinegar
- In a bowl, add the following powder and liquid seasonings to your beef and massage in:
- 1 tbsp. of all-purpose seasoning
- 1 tsp. of black pepper
- 1 tsp. of pimento / all-spice berries
- ½ tbsp. of garlic granules
- 1 beef stock cube
- 1 tsp. of browning
- Handful of fresh thyme sprigs
- Add the following chopped vegetables to the bowl and massage in with the marinated beef:
- ½ medium brown onion, chopped
- 1 bell pepper (2 colours), chopped
- 2 small tomatoes, chopped
- 3-4 garlic cloves, diced
- Marinate overnight, for 3 hours, or for as long as possible (if possible)
Preparing the stew:
- Add 1 tbsp. of oil to a pan and heat up for 2-3 minutes
- Use tongs to add your beef to the pot, and cook through on a medium to hot temperature. This should take ca. 7 minutes
- Remove your beef (and the juices created), then sauté the vegetables and thyme left in the bowl on a medium temperature for around 3-5 minutes
- Re-add your beef, the beef juices, and season with 1 seasoning/bouillon cube
- Add boiled water until the beef is just about covered
- Add another tsp of browning
- Pierce one scotch bonnet pepper and add into pot
- Cover your pan and cook for a total of 40-50 minutes at a medium temperature (until beef is tender)
- In the last 10 minutes, add in 1 tbsp of tomato ketchup , 1 medium potato (chopped into blocks) and 1 medium carrot (chopped into small blocks)
Remove thyme springs when serving.
