Ingredients
- Salt fish
- Bell pepper
- Brown onion
- Chilli pepper
- Garlic cloves
- Vegetable oil
- Plain flour
- Black pepper
- Turmeric
- All-purpose
Method
- Boil ~200g of salt fish 2-3x for 10 minutes each time
- Prepare the following ingredients:
- 1 bell pepper (across 2 colours), chopped
- ½ medium brown onion, chopped
- 1 chilli pepper, diced
- 2 garlic cloves, diced
- Sautee the ingredients in a pan with 1 tbsp. of oil for ~3-5 minutes
- In a bowl, add the following to make the batter for your fritters:
- 1 cup of plain flour
- ½ tsp. of black pepper
- ½ tsp. of turmeric
- ½ tsp. of all-purpose
- Your saltfish (broken up into small pieces)
- Your sautéed vegetables
- Mix together
- Add water, bit by bit, and mix together until you get a “sloppy” texture. This should need about ¾ cup
- Add enough oil to a pan to semi-deep fry
- Use a ladle to scoop in your batter
- Cook on a medium to hot temperature for ~3 minutes on each side
- Garnish with spring onion
