Ingredients
- Eggs
- Red onion
- Medium tomato
- Bell pepper
- Chilli pepper
- Fries/chips
- Salt
- Pepper
- All-purpose

Method
- Prepare the following vegetables:
- ¼ red onion, chopped
- 1 medium tomato, chopped
- 1 bell pepper (2 colours), chopped
- 1 chilli pepper, diced
- In a pan, add ~2 tsps on oil and heat up for 2 minutes of a medium temperature
- Sautee your red onions for ~2 minutes
- Add the rest of your ingredients and cook for 5 minutes
- In your pan, add a 2 handfuls of cooked, thick chips
- Whisk together 5 eggs and season with ½ tsp. of salt, ½ tsp. of black pepper, ½ tsp. of all-purpose seasoning
- Pour your eggs over the chips / vegetable mix
- Cook on a medium heat for ~4-5 minutes, then flip and do the same on the other side
