Caribbean Fry Bakes/Floats

- Flour
- Baking powder
- Sugar
- Salt
- Butter
- Oil
Method
- In a bowl, add the following ingredients:
- 1.5 cups of flour
- 1 tsp. of baking powder
- 2 tbsps of sugar
- ½ tsp. of salt
- 1 tbsp. of butter
- Mix together using your hands
- Create a “well” in the middle of your dry ingredients, and start to add in ½ cup of water bit by bit while mixing and kneading into a dough
- Allow the dough to sit in the fridge for ca. 20 minutes
- Split the dough into balls, and then use a rolling pin to flatten onto a chopping board
- Lay a bit of flour onto your chopping board to make it easier to shape your bakes
- In a wok, or pot, heat up a lot of oil (ca. 3 cups) – enough to deep fry
- Drop in your dough and cook on a medium temperature
- After around 1.5 minutes, your bakes will start to float (hence the name “floats”), at this point, flip over and cook the other side for the same amount of time
- To help will the cooking process, lightly make some circles in your oil while the bakes cook (check out or video for an example)
- Once cooked, remove and allow the oil to dry out on some kitchen paper
- Serve with salt fish, or eat alone, and enjoy!
