Ingredients
- 2 salmon fillets
- Black pepper
- All-purpose
- Fish seasoning
- Garlic granules
- Browning
- Pimento
- Fresh thyme sprigs
- Salt
- Scotch bonnet
- Vegetable oil
- Bell pepper (2 colours)
- Spring onion
- Medium brown onion
- Garlic cloves
- Stock cube
- Corn flour
- Ketchup
Method
- Season 2 salmon fillets as follows:
- ½ tsp. of salt
- ½ tsp. of black pepper
- 1 tsp. of all-purpose
- 1 tsp. of fish seasoning
- ½ tsp. of garlic granules
- 1 tsp. of browning
- Add 2 tbsps of vegetable oil to a pot, alongside:
- ½ tsp. of pimento
- 1 scotch bonnet
- Handful of fresh thyme sprigs
- Cook your 2 salmon fillets, start skin side down and flip halfway. Cook on a medium to hot temperature for around 7-10 minutes
- Remove your salmon and save for later
- Prepare the following ingredients:
- 1 bell pepper, 2 colours
- 1 spring onion stalk, chopped
- ½ medium brown onion, sliced
- 2-3 garlic cloves, diced
- In the same pan that you cooked the salmon, start sautéing your onions and garlic cloves on a medium to hot temperature for ca 2-3 minutes
- Add the rest of your vegetables prepared earlier
- Cook for ca. 5 minutes, then add:
- 1 cup of water
- 1 stock cube
- ½ tsp. of browning
- 1 tsp. of corn flour
- 1 tsp. of fish seasoning
- 1 tsp. of all-purpose
- 1 tbsp. of ketchup
- Cook down for another 5 minutes
- Re-add your salmon fillets
- Cook all together for a final 5 minutes
