Suya Spiced Spaghetti

Ingredients
- 250 grams of stir fry beef strips
- Spaghetti
- Medium red onion
- Garlic cloves
- Black pepper
- Garlic granules
- Tomato paste/puree
- Medium bell pepper (2 colours)
- 1 seasoning cube
- Curry powder
- Dried thyme
- Suya spice
- Salt
- Vegetable oil
Method
- First of all, cook ca. 200 grams (dry) of spaghetti as per the cooking instructions
- Clean 250 grams of beef strips with water and vinegar. Season as follows:
- ½ tsp. black pepper
- 1 tsp. garlic granules
- 1 tbsp. suya spice
- 1 tsp. oil
- Massage seasonings into the beef
- Grill beef on 180 °C for ca. 20 minutes
- In a wok/ pan, add:
- 2 tbsps. of vegetable oil
- ½ medium red onion, sliced
- ½ scotch bonnet pepper, chopped
- 2-3 garlic cloves
- ½ cup tomato paste
- Sautee for around 5 minutes on a medium temperature until the onions are translucent
- Add 1 medium bell pepper (2 colours) and cook in the pan for 2-3 minutes
- Season with ½ tsp. of curry powder, ½ tsp. of dried thyme, 1 tsp. salt, 1 tbsp. of suya spice
- Add 1 cup of pasta water
- Cook down for a further 5 minutes at a medium temperature
- To bring it all together:
- Re-add your spaghetti bit by bit, and toss into sauce created
- Season with 1 seasoning cube
- Re-add your grilled beef and mix everything together
- Garnish with spring onion
