Ingredients
- Corned beef (1 can/340 grams)
- 4 medium sized plum tomatoes
- 2 garlic cloves
- 1+ scotch bonnet pepper
- ½ medium brown onion
- ½ medium red onion
- Tomato paste/ puree
- Black pepper
- Curry powder
- Beef stock cube
- Vegetable oil
- Salt to taste
Method
- Blend until smooth:
- 4 medium sized plum tomatoes (deseeded)
- 2 garlic cloves
- 1+ scotch bonnet pepper
- Splash of water to aid the blend
- Add 1/8th cup of vegetable oil to a pot and heat for 1-2 minutes
- Sautee ½ medium brown onion, sliced, for 2-3 minutes on a medium to high temperature until translucent
- Add ¼ cup of tomato paste/ puree and cook down for a further 2 minutes
- Add your blended mix, season with:
- ½ tsp. of black pepper
- ½ tsp. of curry powder
- 1 beef stock cube
- Cook on a medium to hot temperature for 15 minutes, around this time you will see some of the oil start to settle on top of the stew
- Add in your corned beef (1 can/ 340 grams)
- Cook on a medium to hot temperature for 5 minutes
- Add ½ red onion on top, sliced
- Mix together and simmer for a final 5 minutes on a low temperature
- Add salt to taste
