Ingredients
- 400 grams chicken wings
- Salt
- Black pepper
- Chicken stock cube
- Seasoning/ bouillon cube
- Chicken seasoning
- Curry powder
- Thyme
- Vegetable oil
- Spray oil
- 1 red onion
- 1 red bell pepper
- ¼ bell pepper of any colour
- Scotch bonnet pepper
Method
- Clean 400 grams of chicken wings with lemon and water
- Season your chicken wings with:
- ½ tsp. salt
- ½ tsp. black pepper
- 1 chicken stock cube
- ½ tbsp. chicken seasoning
- ½ red onion, sliced
- A few spritz of spray oil
- Massage everything together
- Cover with boiled water and cook for 15 minutes. Afterwards deep fry or air fry wings (air fry for ca. 20-25 minutes of 180°C)
- Prepare your pepper mix by using a food processor for the following ingredients:
- 1 red bell pepper
- Scotch bonnet pepper
- ½ red onion
Bringing it all together:
- Add 2 tbsps. of vegetable oil to a pot and heat up for 2 minutes
- Add ¼ red onion sliced, heat up for 2 minutes
- Add ½ bell pepper sliced, heat up for 2 minutes
- Add your pepper mix and season with 1 seasoning/bouillon cube, ½ tsp. curry powder, ½ tsp. thyme
- Cook down for 5 minutes on a medium temperature
- Add in your wings, along with a ladle of chicken stock, toss all together
- Cook down for a final 5 minutes until the liquid has dried up
