Nigerian Style Pancakes

Ingredients
- ¾ cup of flour
- 1 tsp. baking powder
- 2 tbsps of brown sugar
- 1/8 cup of milk
- ¼ medium red onion
- ½ scotch bonnet pepper
- Salt
- Water
- Butter
Method
- Whisk the following in a bowl:
- 1 egg
- ¼ of a medium red onion – grated or finely chopped
- ½ scotch bonnet pepper – grated or finely chopped
- 1/8 cup of milk
- In a separate bowl, mix the following ingredients:
- ¾ cup of flour
- 1 tsp. of baking powder
- 2 tbsps of brown sugar
- Pinch of salt
- In the bowl of dry ingredients, making a well in the center
- Pour in your liquid ingredient blend along with ¼ cup of water
- Whisk together thoroughly and add extra water as needed, to get the pancake mix to be very liquid (watch video for example of the “right” consistency
- To create your pancakes, add a stick of butter (ca 1 tsp.) to a pan, and use a ladle to add your pancake mix – you want the pancake to be quite thin
- Cook on a low-medium temperature, and after about 2-3 minutes, fold in half
- After another 2-3 minutes, flip over and cook on the other side
- Repeat with more butter until all of the pancake mix is used up. Garnish with spring onion
