Ingredients
- ~500g mixed goat meat
- Salt
- 1 beef stock cube
- 1 seasoning/bouillon cube
- 1 medium red bell pepper
- ½ medium green or yellow bell pepper
- ¾s of a medium red onion
- 2 scotch bonnet peppers or 1 large scotch bonnet pepper
- Vegetable oil
Method
Cooking the goat meat:
- Clean ~500g of goat meat with water and vinegar or lemon
- Season with:
- 1 tsp. salt
- 1 beef stock cube
- Massage in
- Steam in a pot on a low to medium temperature for around 15 minutes
- After steaming, grill for 15-20 minutes, turning half way through
Preparing the base:
- Roughly chop:
- 1 red bell pepper
- ½ red onion
- 2 scotch bonnet peppers or 1 large scotch bonnet pepper
- Pulse blend the above
Bringing it all together;
- Chop:
- ½ medium bell pepper of any colour
- ¼ medium red onion
- Add 1 tbsp of vegetable oil to a wok and heat up for 2-3 minutes
- Add chopped goat meat and 2 tbsps of the stock created from steaming the meat
- Add 1 seasoning/bouillon cube
- Add chopped bell pepper and onion
- Cook down on a medium to hot temperature for a final 7-10 minutes
