Ingredients
- Rice
- Garlic cloves
- Ginger
- Spring onion stalk
- Coconut oil
- Coconut milk
- Salt
- Pepper
- Fresh thyme sprigs
Method
- Prepare the following ingredients:
- 2-3 garlic cloves, diced
- ¼ inch of ginger, diced
- 1 spring onion stalk, chopped
- In a pot, heat up 1 tbsp. of coconut oil for ~2 minutes on a medium temperature
- Sautee your chopped spring onion for ~2 minutes
- Add your garlic and ginger and sautee for ~1 minute
- Add in ~1.5 cups of washed rice
- Mix together and season with:
- ½ tsp. of salt
- ½ tsp. of black pepper
- ¼ handful of fresh thyme sprigs
- Add coconut milk until the rice is covered with a ½ inch buffer
- Cover the pot and steam on a low temperature until the rice is fluffy
