Ingredients
- 500 of beef
- 2 chicken legs
- Salt
- Black pepper
- Garlic granules
- All-purpose
- Chilli flakes
- Bouillon cube
- Brown onion
- Tinned tomatoes
- Tomatoes
- Red bell pepper
- Romano pepper
- Scotch bonnet
Method
- Clean ~500g of beef and 2 chicken legs (cut up), and season as below:
- ½ tsp. of salt
- 1 tsp. of black pepper
- 1 tsp. of garlic granules
- ½ tsp. of chilli flakes
- ¼ sliced brown onion
- A dash of oil
- Massage the seasonings into the meat
- Add boiled water until the meat is half way covered, then steam on a medium temperature for ca. 20 minutes
- Afterwards, cook in the air fryer for ~15 minutes
- In a food processor, blend together the following ingredients:
- 1 can of tinned plum peeled tomatoes
- 3-4 tomatoes
- 1 red bell pepper
- 1 romano pepper
- ½ brown onion
- 1-3 scotch bonnet peppers
- In a pot, heat up ¼ cup of oil for ca. 2-4 minutes on a hot temperature
- Add your pepper mix and a dash of water
- Season with 1 bouillon/ maggi cube
- Cook down on a medium to hot temperature for ca. 20 minutes
- Add ~150ml of the meat stock made from the boiled chicken/ beef
- Once the meat has air fried, add to the stew and mix together. Add all-purpose to taste
- Cook on a medium temperature for a final 15 minutes
