Ingredients
- Black-eyed peas
- Tomatoes
- Scotch bonnet pepper
- Brown onions
- Garlic cloves
- Ginger
- Palm oil
- Vegetable oil
- Red onion
- Seasoning cube
- Shrimp powder
- Mackerel
Method
- Soak 2 cups of black-eyed peas in water for 45 minutes
- Blend the following ingredients:
- 7 small tomatoes
- 1 scotch bonnet pepper
- ½ brown onion
- 2-3 garlic cloves
- ½ inch of ginger
- In a pot add:
- 1 tbsp. of palm oil
- 1 tbsp. of vegetable oil
- ¼ red onion, sliced
- Sautee for ca. 2 minutes on a hot temperature
- Add your blended tomato mix. Season as follows:
- 1 seasoning cube
- 1 tsp. of shrimp powder
- Cook down for ca. 15 minutes
- Add 1 chopped smoked mackerel along with ~100ml of water
- Cook down for 5 minutes
- Add in all of your soaked peas (they should be soft enough that you can squash them between your fingers)
- If your stew needs it, add more water incrementally
- Simmer for 10 final minutes (medium temperature). Add all-purpose to taste
