Ingredients
- 1 can of corned beef (340 grams)
- ½ brown onion
- 2-3 cloves of garlic
- ½ medium tomato
- ¼ bell pepper
- 1 scotch bonnet pepper
- Vegetable oil
- Salt
- Black pepper
- Fresh thyme
- Ketchup
Method
- Start by preparing your vegetables:
- ½ brown onion, sliced
- 2-3 cloves of garlic, diced
- ½ medium tomato, chopped
- ¼ bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- Add 1 tbsp. of vegetable oil to a pot
- Heat up for 2 minutes
- Add you onions and garlic and cook down for 1-2 minutes of a medium temperature
- Add in your tomatoes, peppers and scotch bonnet, cooking down for another 2 minutes
- Add in your corned beef, mash up in the pot
- Season:
- ½ tsp. salt
- ½ tsp. black pepper
- 1 tbsp. ketchup
- ¼ handful of fresh thyme
- Add around 100ml of water, to help with the cooking process
- Cook down on a medium temperature for 5-7 minutes
