Ingredients
- 4 regular chicken breast fillets
- ½ tsp. of salt
- 2.5 tbsps of suya spice
- 1 tsp. of black pepper
- 1.5 tbsps of vegetable oil
- Spray oil
Method
- Soak wooden skewers in water for at least 30 minutes, this stops them from burning on the grill
- Take 4 regular chicken breast fillets, cover with cling film, and use any kitchen tool you can find to smash the breasts/flatten the breasts
- Cut each breast through the middle (“butterfly” the breasts)
- Then chop the breasts into small chunks
- Add to a bowl and then clean the chicken thoroughly with water and lemon and/or vinegar
- Seasoning the chicken:
- ½ tsp. salt
- 1 tbsp. suya spice
- 1 tsp. black pepper
- Mix/massage together thoroughly using kitchen gloves
- In a bowl, add:
- 1.5 tbsps of suya spice
- 1.5 tbsps of vegetable oil
- Mix together – this will be a “paste” to further season your chicken
- Add the chicken blocks onto your soaked skewers
- Add the skewers to an oven/grill rack
- Use a kitchen brush to brush most of the paste onto the chicken on both sides (save some for later)
- Grill the chicken for 30 minutes, turn over halfway through and add more of the paste with a kitchen brush
- Serve with cucumbers, tomatoes and red onion
