Tatale (Plantain Pancakes)

Ingredients
- 2 overripe plantains
- ¼ cup of plain flour
- 1 tsp salt
- ½ tbsp black pepper
- ¼ medium red onion
- ¼ inch of ginger
- ½ scotch bonnet pepper
- Oil
Method
- Blend / use a food processor to grind down the following ingredients:
- ¼ medium red onion
- ¼ inch of ginger
- ½ scotch bonnet pepper
- 1/8 cup of water
- Peel and chop 2 overripe plantains into chunks
- Mash down with a fork / potato masher (/any masher)
- Add your blend along with 1 tsp. of salt and ½ tsp of black pepper and mix together
- Add ¼ cup of flour and mix together
- Use a ladle to add the mixture to a plan; the mixture should create ca. 4 small to medium pancakes
- Cook on a medium to hot temperature and flip after 4 to 5 minutes
- Continue to cook on both sides until browned and crispy
