Ingredients
- Floured version of your swallow of choice
- Boiled water
Method
These days, you can very easily find your choice “swallow” food in powdered form that can be pounded into a nice dinner or no more than 10 minutes. In this example, I am cooking pounded yam/iyan, however the method will be the same for e.g. fufu.
- Add ~1 cups of boiled water to your pot
- Add ~2 cups of the floured iyan
- Use a wooden spoon to mix initially on a low-medium temperature,
- As you mix, continue to gradually at boiling water until it turns into a doughy texture and the flour is gone. If you want to increase your portion, add more flour and boiled water
- Once the swallow has thickened and most of the flour is gone, you want to start to “pound” the food (you can see an example of this in the tutorial video)
- Pound well such that there are not any lumps in the swallow (it does take a bit of arm power!)
- One you are happy with the amount made and the consistency, cover the pot with a lid and keep it heating at a low temperature for ~5 minutes. This will ensure it has fully cooked through and stop it from being too sticky
- When serving, use wet hands to roll it into the round shape (you can see an example of this in the tutorial video)
- Serve with some your favourite stew or soup! These meals are typically eaten by hand – you pinch off some of the dough, roll in one hand into a ball, dip into your soup/stew and… swallow, of course
