Ingredients
- 1-2 scotch bonnet peppers
- 2 spring onions sprigs
- 1/2 medium brown onion
- 1 inch of ginger
- Fresh thyme sprigs
- 4 cloves of garlic
- Pimento/all-spice
- Black pepper
- Brown sugar
- Cinnamon
- Nutmeg
- Vegetable oil
- White wine vinegar
- Dark soy sauce
- Browning
- 1 lemon or lime
Method
Pulse blend the following ingredients down into a paste
- 1-2 scotch bonnet peppers (or as many as you desire!)
- 2 spring onions sprigs (chop down to make it easier to blend down)
- 1/2 medium brown onion (chop down to make it easier to blend down)
- 1 inch of ginger (peeled)
- Handful of fresh thyme sprigs (chop down to make it easier to blend down)
- 4 cloves of garlic
- 1/2 tbsp. of pimento/all-spice
- 1/2 tbsp of black pepper
- 1/2 tbsp. of brown sugar
- 1/2 tsp. of cinnamon
- 1 tsp. of nutmeg
- 2 tbsps of vegetable oil
- 2 tbsps of white wine vinegar
- 2 tbsps of dark soy sauce
- 1/2 tsp. of browning
- The juice of 1 lemon or lime
