Ingredients
- Yam
- Bell pepper
- Chilli pepper
- Eggs
- Flour
- All purpose
- Parsley
- Salt
- Garlic salt
- Black pepper
- Dry chilli flakes
- Oil
Method
- Chop up ~50g worth of yam into medium sized rectangle shapes
- Soak in water as you chop / go along
- Boil the yam for ~10 minutes with a pinch of salt
- Separately, prepare the following ingredients:
- ½ a bell pepper (across 2 colours) finely diced
- 1 chilli pepper, finely diced
- In a bowl, whisk together two eggs and mix in your peppers
- In a separate bowl, add the following mix:
- 1 cup of flour
- ½ tsp. of all purpose
- ½ tsp. of parsley
- ½ tsp. of salt
- ½ tsp. of garlic salt
- ½ tsp. of black pepper
- ½ tsp. of dry chilli flakes
- Coat your yam in the egg mix, then flour, then egg again, and set to the side. Repeat for all blocks
- Fry in medium temperature oil for ~4 minutes on each side, until golden with a light crisp
- Serve with chilli oil
