Ingredients
- 250-300g of yam
- Red onion
- Brown onion
- 1 red bell pepper or romano pepper
- Tomato
- Spinach
- Vegetable oil
- Palm oil
- Tomato puree
- All-purpose
- Chicken stock cube
- Crayfish seasoning
- Mackerel fillet
Method
- Prepare the following ingredients:
- ~250-300g of yam, chopped into blocks
- ¼ red onion, chopped
- ¼ red bell pepper or romano pepper, sliced
- In a food processor, blend together:
- ¼ red bell pepper or romano pepper
- ¼ brown onion
- ½ tomato
- For ca. 2 minutes, heat up in a pot 1 tbsp. of vegetable oil and ½ tbsp. of palm oil
- Sautee the chopped red onion for ca. 2 minutes
- Add 2 tbsps of tomato puree and your blended pepper mix
- Season with 1 chicken stock cube
- Cook down further for ca. 2 minutes
- Add in your yam and coat in the pepper mix
- Add water until the yam is half covered
- Add ~1/4 of a smoked mackerel fillet, 1 tsp. of crayfish powder and all-purpose to taste
- Cover and cook on a medium to high temperature for 20 minutes
- After 20 minutes, mash the yam to your desired consistency
- Add your sliced red bell pepper and small handful of sliced spinach
- Simmer for a final 5 minutes on a low to medium temperature
