Ingredients
- 500g lamb
- Salt
- All-purpose
- Paprika
- Black pepper
- Green seasoning
- Curry powder
- Fresh thyme springs
- Olive oil
- Coconut oil
- Brown onion
- Garlic cloves
- Carrot
- Potato
- Scotch bonnet
Method
- Clean ~500g of lamb with water and vinegar. Season as follows:
- ½ tsp. of salt
- 1.5 tbsps of all-purpose
- ½ tsp. of paprika
- 1 tsp. of black pepper
- 1 tbsp. of green seasoning
- 2 tbsps of curry powder
- 1 tsp. of olive oil
- Massage into the meat
- Prepare the following ingredients and add to the bowl with the lamb, mix together:
- ½ brown onion, sliced
- ~2-3 garlic cloves, diced
- A few sprigs of fresh thyme
- In a pot, heat up 1 tbsp of coconut oil for ~1-2 minutes on a hot temperature
- Sautee your garlic cloves with 1 tbsps of curry power (burning the curry powder)
- Brown your lamb on both sides for ~7 minutes
- Re-add your onions and thyme
- Add water until the lamb is almost covered
- Chuck a scotch bonnet on top, then cook on a medium temperature for ~1 hour
- After 1 hour add:
- 1 chopped carrot
- ½ chopped potato
- Cook down for another 20-30 minutes, until the lamb is extra soft. Add more water if needed to have the lamb almost covered again
