Ingredients
- 1 mango
- 1 small tomato
- Green bell pepper
- Scotch bonnet pepper
- 1 lime
- 1 shallot
- Parsley
- Salt
- Black pepper
Method
- Peel and chop 1 mango into small blocks (watch our video to see the most effective way to do this)
- Deseed and chop 1 small tomato into small blocks
- Chop ½ of a medium green bell pepper
- Dice ½ of a scotch bonnet pepper
- Throw all of these ingredients in a bowl, and add:
- The juice of 1 lime
- Handful of chopped parsley
- 1 shallot, chopped
- ½ tsp. of salt
- ½ tsp. of black pepper
- Mix all together
- This works as a perfect side dish – chuck it on top of your jerk chicken for an extra kick
