Ingredients
- Flour
- Bicarbonate soda
- Baking powder
- Nutmeg
- Cinnamon
- Ginger powder
- Butter
- Sugar
- Syrup or treacle
- Eggs
- Milk (plant or dairy)
Method
- In a bowl, mix together the below dry ingredients:
- 2 cups of flour
- 1 tsp. of bicarbonate soda
- 2 tbsps of baking powder
- ½ tsp. of nutmeg
- 1 tsp. of cinnamon
- 2 tbsps of ginger powder
- In a small pot, add the following ingredients and melt/mix on a low to medium temperature:
- ½ cup of butter
- ½ cup of sugar
- ½ cup of syrup or treacle
- ¼ cup of water
- 2 eggs
- 1 cup of milk (can be plant based)
- Add the liquid mixture to your dry mix and whisk all together until you get a creamy consistency / batter
- Add this mix to a tray lined with baking paper; bake for 1hr 15 on 160°C. You will know it’s cooked if you can put a toothpick inside and pull it out dry
- Serve with cream, ice cream, or eat on its own
