Ingredients
- 1 large potato
- 1 egg
- Mayonnaise
- Mustard
- Brown sugar
- White wine vinegar
- 1 romano pepper
- 1 spring onion stalk
- Mixed vegetables
Method
- Peel and chop 1 large potato into small squares
- Boil in salted water for around ca. 8-10 minutes, you don’t want it to be “mushy”
- Separately, boil 1 egg for 15 minutes
- Once boiled, remove and put into a bowl, and sit in cold water for 5 minutes
- To prepare the dressing, mix the following into a bowl:
- 3 tbsps. of mayonnaise
- 1 tsp. of mustard
- 1 tsp. of brown sugar
- 1 tsp. of white wine vinegar
- Chop up the below:
- ¼ romano pepper
- 1 spring onion stalk
- Finally, combine all contents into a bowl:
- Potatoes
- Pepper, spring onion
- ½ cup of mixed veg (peas, sweetcorn, carrot)
- 1 boiled egg
