Ingredients
- 250 grams of prawns/ shrimps
- ½ medium brown onion
- ½ medium tomato
- Spring onion
- Garlic
- Ginger
- Red bell pepper
- Olive oil
- Vegetable oil
- Salt
- Black pepper
- All-purpose
- Fish seasoning
- Browning
- Pimento
- Fresh thyme
- Ketchup
Method
- Prepare the following ingredients:
- ½ medium brown onion ,sliced
- ½ medium tomato, chopped
- 1 spring onion stalk, sliced
- 2-3 cloves of garlic, diced
- ¼ inch of ginger, diced
- ¼ medium red bell pepper, chopped
- Season your 250g of cleaned shrimps/ prawns:
- ¼ tsp. salt
- ¼ tsp. black pepper
- ½ tsp. all-purpose
- ½ tsp. fish seasoning
- ½ tsp browning
- ½ tsp. olive oil
- Also add your all of your chopped ingredients excluding your garlic and ginger
- Mix all together, and if you have time you can leave to marinate in the fridge for a few hours
- Add 2 tbsps. of vegetable oil to a pan
- Add in just your garlic, ginger and shrimps, then cook on a medium to hot temperature for up to 5 minutes, then remove and save for later. As the prawns cook fast, we cook these first
- Into the same pot, add in all the rest of your vegetables
- Add in 1 scotch bonnet, along with a handful of thyme springs
- Add ca 250ml of water
- Season further:
- 1 tbsp. of ketchup
- Salt/ all-purpose to taste
- ½ tsp. of pimento/ all-spice berries
- Cook down on a medium to hot temperature for 15 minutes
- Re-add your prawns and cook down for a final 2 minutes
