Ghanaian Style Pancakes

Ingredients
- Evaporated milk
- Egg
- Sugar
- Nutmeg
- Butter
- Vanilla extract
- Plain flour
- Salt
- Oil
Method
- Blend the following in a blender:
- 1 cup of evaporated milk
- ½ cup of water
- 1 egg
- 1/8th cup of sugar
- ½ tsp. of nutmeg
- 1 tbsp. of melted butter
- 1 tsp. of vanilla extract
- 1 cup of plain flour
- ½ tsp. of salt
- In a pan, heat up 1 tsp. of oil for ca. 2-3 minutes
- Add some of your pancake mix to the pan and spread around until all the entire bottom of the pan is covered
- Pancake should be thin (similar to crepes), so do not pour in too much mix
- Heat on a low to medium temperature for ca. 2-3 minutes on each side (you will know it’s ready to flip as the sides would have “hardened” and can be easily “peeled” to flip over)
- Repeat until all pancake mix is used up
- These measurements should get you 3-4 pancakes in a medium sized pan
- Optional: top with powdered sugar
